What is and where live: the truffle is part of Tuber family, is a strange fruit why is similar at mushrooms, but isn't mushrooms, born under the ground and emanate his characteristic smell only when is mature, in this way wild animal tank his nose can find it and eat, so they scatter his spores, allowing his reproduction.
In Italy there is 16 city that have the denomination "city of truffle", included also San Miniato, and are comprise between the river Pò and the region Molise.
In Kitchen: of this precious tuber there are different types, each one with different characteristic, regard the ripening period, flavour, smell and quality.
- Truffle must keep in fridge wrapped up in dry paper and closed in a jar.
- Before of use must be cleaned with a brush for remove the dirty.
We in ours restaurant use truffle grated on plate just finished, I think that isn't adviced cook it, also if is no rare find recipes that include the cooking of the truffle.
The price: the truffle is a valuable food, rare and expensive, in particular that white (famous the delicious "white truffle of San Miniato").
There isn't a standard price, but change of year to year; often the cause are his abundance or scarsity and the demand of market, like in stock market.
Another characteristic that influence the price is size and the shape: the sizes big and with shape round and harmonics are more sought.
A manifestation more important is the "Sagra del tartufo bianco di San Miniato", an opportunity where discover many variety of truffle and tasting the best plate with white truffle and black tuffle of the zone.
